嚼得少、吃得快 更容易饥饿

  平时都会有这样的感受,一旦吃饭吃得快了,很快就会饿了。

  这是因为大脑摄食中枢感知饱的信息需要时间,口腔和胃里消化出来的少量小分子,对于食欲的控制至关重要。而且,过快进餐的数量是不由大脑控制的,只能由胃的机械感受器来感知。

  胖子普遍食欲好,进食速度快,大多数情况下,食物没有得到充分的咀嚼,没有形成足够的食糜贴附于胃壁,所以虽然已经吃了较多食物,但仍有饥饿感。有研究证实,同样数量的食物,嚼得少、吃得快,就会更容易饥饿。所以,吃饭最好细嚼慢咽,这也是控制食量的小策略之一。

  而且,另一方面,咀嚼时间过短,迷走神经仍处于过度兴奋状态,食欲也会相对亢进。结果是进食速度快的人,在大脑饱食中枢发出停止信号时,已经吃了太多。(江苏省苏北人民医院营养科副主任医师 赵绮华)
