饮食“贴秋膘”需防油摄入过量

  俗话说“贴足秋膘好过冬”。美美的饱餐无形中会摄入大量烹调油,营养专家指出,过油食品虽然更香,但长期过量食用危害也不小。专家提醒,日常饮食中要注意烹调油的摄入,以减少高血脂等慢性病的发病风险。

  其实,烹调油有助于食物中脂溶性维生素的吸收利用,除了可以增加食物的风味外,还是人体必需的脂肪酸和维生素E的重要来源。但是,过多脂肪摄入会增加糖尿病、高血压、血脂异常、动脉粥样硬化和冠心病等慢性病的发病风险。

  根据《中国居民膳食指南》推荐,健康成年人每人每天烹调用油量应不超过25到30克。中国疾病预防控制中心健康专家倡导,居民在家庭烹饪中要学会使用控油壶,把全家每天应食用的烹调油倒入带刻度的控油壶中,炒菜用油均从控油壶中取用,坚持家庭定量用油。

  专家指出,不同的烹饪方法用油量有多有少,烹调食物时尽可能选择不用或少量用油的方法,如蒸、煮、炖、焖、凉拌、急火快炒等。有些食物比如面包、馒头、薯片、鸡蛋等,在煎炸时会吸取较多油,最好少用煎炸的方法来烹饪这些食物,或者用煎的方法代替炸,也有助于减少烹调油的摄入。
