百岁老人都爱喝的长寿粥

  燕麦粥是有名的 “长寿粥”,很多百岁老人都有喝燕麦粥的习惯。燕麦里加点小米,做成燕麦小米粥,喝起来清香绵柔,还有安神助眠、降脂降糖、养胃润肺的效果。

  燕麦中水溶性膳食纤维丰富,有降血脂、降胆固醇、控血糖、通便等作用。燕麦中的很多营养素都比大米高,如蛋白质是大米2倍,钙是大米10倍,铁、锌、硒等矿物质都是大米2~3倍,特别适合老年人进补。小米中色氨酸很高,色氨酸进入人体后可促进神经递质5-羟色胺的分泌,这种物质有安神镇静、促进睡眠的作用。

  具体做法是,取燕麦100克、小米100克、枸杞适量。燕麦片、小米、枸杞洗净,放入冷水浸泡30分钟。煮锅中加入适量水,放入燕麦,大火煮沸后转小火。煮15分钟后,加入小米,搅匀,注意搅拌,煮熟后,加入适量枸杞,关火,焖10分钟后可食。枸杞养肝、滋肾、润肺。在粥中加入少量枸杞,不仅增色增香,而且食疗效果更好。(第三军医大学营养与食品研究中心副教授常徽)
