  我国萝卜的品种很多,又是北方广大地区的大菜,多食萝卜的确有益于人,俗语反映的就是人们长期食用萝卜的经验。李时珍称赞萝卜为“蔬中之最有利益者”,说它“生吃可以止咳消胀气,熟食可以化瘀助消化”。《食疗本草》则说,可以“利五脏,轻身,令人白净肌细”。《新修本草》又说,能“大下气,消谷和中,去痰癖,肥健人”。

  萝卜入药的途径主要是各种形式的食用,也有配入复方运用的。如嗓子作痛、咳嗽多痰、食后作酸或食油腻后不适等,均可用生嚼几片萝卜的简单方法使症状缓解。肺痿咯血,可食萝卜羊肉汤;热痢、血痢,可服萝卜蜜汁;糖尿病口渴多饮,可吃萝卜粳米粥;肠梗阻,用萝卜芒硝汤;慢性支气管炎,喝萝卜饴糖水;鼻出血不止,萝卜汁配酒内服;脚裂、脚肿,萝卜片煮汤熏洗。

  总之,萝卜食用的方法简单而又多样化,无论炒、炖、烧、煮、下汤、生食均可得美味。要注意的是,胡萝卜素属脂溶性物质,只有溶化在油脂中才能转化为维生素A,最好用油烹食或同肉、排骨、猪肝、鱼一起炖。一般不要过多生食,因为生食既不易消化,胡萝卜素不能被很好地吸收。
